This delicious vegan Cashew Lime Green Smoothie will be your new go-to for the warmer months! 

It’s an incredibly refreshing and light tasting from the lime, yet dense enough to keep you full with fiber-rich spinach, fresh herbs, dates, and mango. The cashews are the star ingredient grounding this smoothie and taking the texture to a whole new level of creaminess, sans dairy!

It’s no surprise I love adding fresh herbs to my smoothies, especially cilantro, mint, and parsley for added nutrition and health benefits. They’re great for digestion and overall nutrition support. More specifically, the combination of mint and cilantro in a smoothie has to be one of my favorite herb marriages!

Simply combine all ingredients in a high-speed blender and blend until smooth! Add ice to chill to your desired temperature and serve immediately.

Looking to speed up the prep time a bit? You can use frozen mango instead of fresh to help cool down the smoothie faster. Plus, this gives a bit of a thicker texture, too! 

FAQ About How To Make This Smoothie

What if I’m allergic to cashews?

Don’t sweat it! You can simply use macadamia nuts, brazil nuts, hemp seeds, or almonds. The texture and taste will be a bit different but you’ll still keep the healthy fats, protein, and a bit of fiber from the nuts used.

I would also adjust the sweetness by adding an additional date to the recipe since cashews have a natural sweetness that almonds and macadamia nuts don’t have.
